Caramel pancakes – or possibly pikelets

A very naughty friend* introduced me to Lotus Caramelised Biscuit Spread (also known as Speculoos spread) which surely is one of the greatest things ever to come out of Belgium. And I’m bearing in mind their history with beer and chocolate.

It is INCREDIBLE! A creamy, smooth, lightly spiced, VEGAN caramel spread. Mmmmmm. While this might be one of the best things to grace a slice of toast for a long while, there are going to be many more uses for it than just that.

Having eaten several spoonfuls directly from the jar, a myriad of delicious possibilities began to flit through my mind, each one more sensational than the last. Keep checking back for more recipes folks – these caramel pancakes are just the beginning…

Quick to whip up, the caramel pancakes have a perfect fluffy texture and a delicious flavour, and need nothing more than a splodge of soft butter to make them complete. We made a batch for afternoon tea and they were a hit with three generations of my family – Kipper was particularly taken with them. A subsequent breakfast batch proved that maple syrup, rather than gilding the lily as I had feared, was a spectacular addition.

Oh, apparently in Australia, pancakes are called pikelets. So now you know.

Ingredients
  1. 50g Lotus Caramelised Biscuit Spread
  2. 35g self-raising flour
  3. 0.5 tsp baking powder
  4. 1 egg
  5. 25-50ml milk
  6. Sunflower oil, for frying
  7. Butter, to serve
Instructions
  1. Beat the Lotus Caramelised Biscuit Spread, flour, baking powder and egg together. Gradually add the milk, and mix well to give a smooth batter with a loose dropping consistency - you may not need all the milk.
  2. Heat the oil in a frying pan over a medium heat. When it is hot, drop tablespoons of the batter into the pan - don't overcrowd the pan - and cook for 2-3 minutes, until bubbles appear on the top.
  3. Flip the pancakes over and cook for a further 1-2 minutes until cooked through and golden on both sides.
  4. Serve warm spread with plenty of butter. Yum!

Ingredients
