Chocolate animal shortbread biscuits

It’s been a while since Kipper and I did any baking, and we got these cookie cutters in Ikea at the weekend, so we had a perfect opportunity to rustle up some animal shortbread biscuits to take to our playdate this afternoon. Kipper is very good at helping in the kitchen. She can now read the numbers off our electronic scales, and likes to help weigh out the ingredients. There are sufficiently few in this recipe that she doesn’t reach the limit of her attention span, either. She also helped with the rolling out and cutting. And of course the decorating. Ever tried keeping a pre-schooler away from melted chocolate and sprinkles? HA! These are basic, buttery shortbread biscuits. They are delicious plain, or with chocolate. Perfect with a nice cup of tea and a sit down. You can make them in any shape you like. We used the smaller of the new cutters – snail, squirrel, hedgehog, and unspecified mammal. (Note: according to Ikea this is a bear. See photos below. I’ll let you be the judge.)

Ingredients
  1. 100g butter
  2. 50g golden caster sugar
  3. 100g plain flour
  4. 50g rice flour
  5. Dark and white chocolate and sprinkles, to decorate (optional)
Instructions
  1. Preheat the oven to 180C.
  2. Cream the butter and sugar until fluffy. Sift the flours together and very gently fold into the creamed mixture. Do not beat or mix harshly - you will get tough biscuits.
  3. When the dough is crumbly but just coming together, squash it into a ball with your hands, then roll it out between two sheets of greaseproof paper, to a thickness of around 5-6mm. Cut out your desired shapes - or just cut into squares or fingers. Transfer to a baking sheet and bake for 15-20 minutes until just starting to turn golden.
  4. Cool the shortbread biscuits on wire racks before decorating with chocolate and sprinkles, if you're feeling up to it.
  5. Munch.
