Zesty chopped salad – TCP

A quick side dish for you. We ate this with the spicy pan-fried salmon and it was deliciously zesty and fresh alongside the oily spicy fish. It’s also fantastic with humous, or as part of a tapas-style starter.

You can put diced olives in instead of the tapenade. Or leave both out if you don’t like olives. The chopped salad is yummy either way.

Oh, and it’s called TCP because of the ingredients – tomato, cucumber, and pepper. Don’t try to disinfect anything with it.

This makes a small bowlful. Enough as a side dish for one or two people.

Zesty chopped salad – tomatoes, cucumbers and peppers with a lemony dressing

Zesty chopped salad

You will need:
1 small red or yellow pepper
7-8 cm cucumber
3-4 small tomatoes
1 tbsp chopped parsley
Juice of 0.5 lemon
2 tbsp extra virgin olive oil
0.5-1 tsp tapenade (optional)
salt and pepper to taste

What to do:
Finely dice the pepper, cucumber and tomato, and mix with the chopped parsley.
Whisk the lemon juice, olive oil, tapenade and seasoning together and pour over the vegetables.
Stir the dressing into the chopped salad and serve.
