  • 100 g plain popcorn (or 100g popcorn kernels, see note) (9 cups popped popcorn or 3/5 cup cup kernels)
  • 30 g dried apple crisps (single serving sized bag)
  • 75 g coconut oil or vegan spread (3/8 cup)
  • 100 g light brown sugar (½ cup)
  • 3 tbsp honey
  • ¼ tsp bicarbonate of soda


  • Put the popcorn in a very large bowl and set aside. Line two large baking sheets with parchment. Preheat the oven to 180°C (350°F).
  • Using a food processor or mini-chopper, blitz the apple crisps to powder. Pour the powder over the popcorn.
  • Combine the coconut oil, brown sugar and honey in a heavy-based saucepan and place on a medium-high heat. Cook, stirring, until the mixture comes to the boil. Reduce the heat to a simmer and cook for 3-4 minutes, stirring occasionally.
  • Remove from the heat and stir in the bicarbonate of soda. The honey caramel will bubble up and form a smooth, thick foam. Pour this over the popcorn and mix everything together using a large spoon. Be very careful not to touch the caramel as it is extremely hot and will burn you!
  • Once the popcorn is thoroughly coated in the honey caramel and apple crisp crumbs, spread it out on the lined baking sheets in as close to a single layer as possible. Bake at 180°C (350°F) for about 15 minutes, until just starting to darken in colour.
  • Remove from the oven and allow to cool before gently breaking apart the pieces of popcorn.
  • Store in an airtight container.


You can buy plain, unseasoned popcorn, or make your own. Pop 100g (3/5 cup) popcorn kernels using whichever method you prefer - hot air popper, stovetop, microwave or campfire!
