Apple and honey gourmet popcorn

- 100 g plain popcorn (or 100g popcorn kernels, see note) (9 cups popped popcorn or 3/5 cup cup kernels)
- 30 g dried apple crisps (single serving sized bag)
- 75 g coconut oil or vegan spread (3/8 cup)
- 100 g light brown sugar (½ cup)
- 3 tbsp honey
- ¼ tsp bicarbonate of soda
Put the popcorn in a very large bowl and set aside. Line two large baking sheets with parchment. Preheat the oven to 180°C (350°F).
Using a food processor or mini-chopper, blitz the apple crisps to powder. Pour the powder over the popcorn.
Combine the coconut oil, brown sugar and honey in a heavy-based saucepan and place on a medium-high heat. Cook, stirring, until the mixture comes to the boil. Reduce the heat to a simmer and cook for 3-4 minutes, stirring occasionally.
Remove from the heat and stir in the bicarbonate of soda. The honey caramel will bubble up and form a smooth, thick foam. Pour this over the popcorn and mix everything together using a large spoon. Be very careful not to touch the caramel as it is extremely hot and will burn you!
Once the popcorn is thoroughly coated in the honey caramel and apple crisp crumbs, spread it out on the lined baking sheets in as close to a single layer as possible. Bake at 180°C (350°F) for about 15 minutes, until just starting to darken in colour.
Remove from the oven and allow to cool before gently breaking apart the pieces of popcorn.
Store in an airtight container.
You can buy plain, unseasoned popcorn, or make your own. Pop 100g (3/5 cup) popcorn kernels using whichever method you prefer - hot air popper, stovetop, microwave or campfire!
