Flaky golden pastry, sweet caramelised onions, and delicious salty cheese combine in this wonderful savoury onion and feta tart. An easy, tasty family dinner!
I never seem to have the right number of onions.
Onions are one of the vegetables that arrive weekly in our organic box – same amount every week. And yet somehow I either manage to use them all up in a couple of days, or else I barely use any onions at all and then the next week’s onions arrive and we have a huge onion surplus.
Onion overwhelm
The second scenario happened recently and my onion storage tub was overflowing with onions. At this point I realised that using one onion at a time as the basis for a sauce or whatever just wasn’t going to work. I had to go all-in and make a completely onion-focused dish.
What plays well with onions?
Onions have a pungent savoury flavour coupled with a delicious sweetness that develops as the natural sugars in the vegetable caramelise on cooking. They add rich notes to all kinds of dishes but when they’re the ‘star’, as in this dish, they pair well with salty, herby and buttery flavours.
A quick look in the fridge turned up some salty feta, and a packet of puff pastry that looked like a good base to tie everything else together. And thus, this delicious caramelised onion and feta tart was born!
Onion and feta tart – ingredients
As I said, this delicious tart was conceived to use up a surplus of onions and used a few other bits and bobs that I had hanging around in my cupboards and fridge. It contains no exotic ingredients at all, but is truly a savoury and satisfying dish!
To make an onion and feta tart yourself, you will need:
- onions – naturally!
- olive oil – for frying/caramelising the onions
- seasonings – dried thyme, fennel seeds and black pepper
- feta cheese
- puff pastry – can’t make a tart without pastry! I use ready-rolled because it’s just so convenient.
- chopped parsley – optional, but it makes a lovely garnish with a fresh flavour
How to make caramelised onion and feta tart
I managed to use up 5 onions in this tart. You first need to slice and caramelise the onions – caramelising them can take some time, but it’s quite a relaxing activity, and you can get on with other jobs while they look after themselves. Just come back every so often and give your onions a stir to make sure they cook evenly and don’t stick to the pan.
Once the onions are caramelised, add the seasonings, and then assemble the tart. Simply unroll the pastry, score a border around the edge, and spread the onion mixture over. Scatter with the crumbled feta, and then pop the caramelised onion and feta tart into the oven for about 20 minutes.
Once the filling is bubbling and golden and the pastry is risen and flaky, your delicious tart is ready to eat!
What to serve with an onion and feta tart
This wonderful caramelised onion and feta tart needs very little in the way of accompaniment. We ate it with some buttered green vegetables, but a leafy salad would also be wonderful.
The puff pastry is quite carbohydrate-dense so I didn’t serve any potatoes or other carbs with our tart. However some creamy potato salad would also be a nice addition, especially if you served it in smaller portions.
Delicious for lunch or dinner
This lovely tart can be sliced into big squares for just a few diners, or cut into many smaller squares and served as part of a lunch buffet. You can even pop a piece into a lunchbox if you need a portable meal for school or work.
Meanwhile, my family all agree that this feta and caramelised onion tart is a delicious dinner! I’ll be storing this recipe for the next time we have a surplus of onions – especially since it can be on the table in under an hour – yay!

Caramelised onion and feta tart
Ingredients
- 5 medium onions
- 3-4 tablespoon olive oil
- ½-1 tsp dried thyme
- 1 teaspoon fennel seeds
- ¼ teaspoon ground black pepper (or to taste)
- 325 g ready-rolled puff pastry
- 200 g feta cheese, crumbled or cut into small dice
- 1 tablespoon chopped parsley (optional)
Instructions
- Peel and thinly slice the onions.
- Heat the olive oil over a medium heat in a large skillet. Add the onions and cook, stirring occasionally, for around 25 minutes until the onions are very soft and starting to brown.
- Add the thyme, fennel seeds and pepper to the onions and stir well. Continue to cook for a further five minutes.
- Preheat the oven to 220°C (430°F).
- Line a baking tray with parchment. Unroll the puff pastry onto the parchment. Use the tip of a sharp knife to score a border around the pastry, about 1cm (approx. ½ inch) from the edge.
- Spread the onion mixture over the pastry, just up to the scored line – leave the border clear. Sprinkle the feta over the onion mixture.
- Bake the tart at 220°C (430°F) for 20 minutes until the pastry is risen and the filling is bubbling and golden brown. Remove from the oven and sprinkle over the chopped parsley.
- Serve the tart hot or warm.

Simple and tasty recipe..I added some oregano and garlic oil to the feta and a sprinkle of walnuts too served with a small plum tomato salad with basil and balsamic.. very Mediterranean treat 😋
