What is parfait?

The term Parfait – meaning ‘perfect’ in French – can refer to several different sweet and savoury dishes. In France, parfait is typically a frozen dessert made with cream, eggs, and liqueur. While in the UK, parfait sometimes refers to a frozen dessert, but can also mean a smooth pâté, usually made from poultry liver such as chicken or goose.

American parfait – which is what I’m making here – is a sweet dish in which fruits, nuts, granola, and other ingredients are layered with cream, ice-cream or yogurt. This type of parfait is sometimes called yogurt parfait. It has an attractive presentation and is often made in tall stemmed glasses to accentuate the appearance of the layers.

Origins of this fruit and nut yogurt parfait

I first made this combination of fruits, nut butter and yogurt as an easy breakfast when my daughter Kipper and I were camping at a music festival! With limited cooking facilities we needed something that would be easy to make and would fill us up until lunchtime.

Neither of us likes breakfast cereal, and I find that bread and baked goods leave me hungry by mid-morning. This delicious breakfast parfait was easy to assemble, delicious, and kept us going for several hours without feeling hungry.

Since then, this delicious yogurt parfait has evolved into a slightly more elaborate – and even more nutritious! – layered dessert or fancy breakfast. I’ll often rustle one up as a sweet treat after lunch, or as a mid-afternoon snack. It feels like an indulgence, but it’s really a nutrient-packed dish that can be a regular part of a healthy diet.

The Building Blocks of the Perfect Fruit and Nut Yogurt Parfait

Yogurt

Creating a delicious fruit and nut yogurt parfait begins with selecting the right yogurt. I find cow’s milk difficult to digest, but I love the creaminess and mild flavour of goats’ milk yogurt.

Alternatively, choose thick and creamy Greek yogurt for a protein boost, traditional natural yogurt for a smoother texture, or a dairy-free alternative such as plain soya or coconut yogurt. Each brings a unique flavour and texture to the parfait. Look out for live yogurts, as these will also contain gut-friendly bacteria and give your microbiome a boost!

Fruit

Next, choose your fruits. Seasonal fruits offer the freshest taste and maximum nutritional benefits. Choose fresh strawberries and stone fruits like peaches and apricots in Summer, blackberries and plums in Autumn, crisp apples and citrus during the Winter, and pears or gently cooked rhubarb in the Spring.

You can also use juicy tropical fruits such as mango, pineapple or dragon fruit, or colourful nutrient-dense choices such as kiwi or pomegranate. Vivid colours indicate the presence of polyphenols, important plant-based antioxidants that have many health benefits.

I usually cut up whatever fresh fruit is to hand, but you can also used cooked fruits such as stewed apples or poached peaches or pears.

Nuts

Nuts add richness and a dose of healthy fats, making your parfait not just tastier but also more satisfying. I like to add layers of drizzled almond butter as I assemble the parfait, then top it off with a sprinkle of chopped nuts or flaked almonds.

You can ring the changes with different nut butters such as hazelnut or pistachio. Use whatever crunchy nuts you prefer for a delicious topping to your parfait.

Optional extras

I love to throw in some optional extras for additional flavour, texture and nutrition. I often stir some milled seeds and/or desiccated coconut into my yogurt before building the parfait layers. These add extra dietary fibre and healthy fats, and I love the ‘chew’ they add!

A little cinnamon, nutmeg or other spice is lovely shaken over the fruit. If you find the yogurt too tart, you can also add a little sweetness with honey, date syrup (silan) or a drizzle of maple syrup.

If you want to add more crunch, or bulk out the parfait with additional ‘slow-release’ carbohydrate, consider adding a layer or two of toasted oats or barley flakes. A spoonful of low- or no-sugar granola is another delicious option that will add complexity and enliven your parfait.

Layering up – creating a beautiful parfait

Building the layers is the most fun part of creating your parfait. Alternating layers of yogurt with brightly coloured fruits and creamy nut butter not only makes for an appealing presentation, but also ensures a balanced blend of flavours with every spoonful.

Nutritional Benefits

Fruit and nut yogurt parfait contains a treasure trove of vitamins, minerals, and other essentials for good health. Live yogurt is a rich source of probiotics, which are key in maintaining gut health and enhancing digestive function. It also has a relatively high protein content, making it a good choice as part of a nutrient-dense meal or snack.

Fresh fruits introduce a spectrum of antioxidants and vitamins into the mix. From the vitamin C in berries and citrus to the potassium and vitamin K in rhubarb, each fruit brings its own unique nutritional profile. Eating a wide selection of fruits of different types and colours will promote a healthy immune system, heart, nervous system and more.

Nuts add a final, nutrient-packed punch to the parfait, bringing in healthy fats, fibre, protein and essential trace elements. Almonds, for example, are high in vitamin E, certain B vitamins, and magnesium. Meanwhile pecans and hazelnuts offer omega-3 fatty acids, and minerals zinc and iron among others.

Combined, the layers of yogurt, fruits, and nuts in a creamy breakfast parfait create not only a delicious treat but also a nourishing meal. Fruit and nut yogurt parfait is a superb addition to a diet that supports overall health and well-being.

How to make Fruit & Nut Yogurt Parfait – Preparation and Presentation

Careful construction of your parfait layers can transform a simple snack into a feast for the eyes, as well as the tastebuds! Start with a layer of creamy yogurt as a base, followed by a layer of fresh fruits, and then a drizzle of almond butter. Repeat the layers, trying to make each one visible from the side to captivate the eye. Add a final layer of yogurt then scatter more fruit and chopped nuts on the top to garnish.

When it comes to presentation, the choice of vessel can make a difference. Clear glasses or jars allow for the gorgeous contrasting layers to shine through. The stripes of colours and textures will make your parfaits not just delicious, but also beautiful.

Ingredients
  

  • 180-200 g natural, unsweetened yogurt (I like goats milk yogurt)
  • 4-6 tablespoon prepared fruits e.g. berries, diced peaches, pears, apricots etc, stoned cherries, sliced banana – or a combination of your choice
  • 2-3 tablespoon creamy almond butter (or your preferred nut butter)
  • 2 teaspoon flaked almonds (optional)

Optional extras – see notes below

  • 1-2 tablespoon milled seeds such as flax/linseeds
  • 1-2 tablespoon desiccated coconut
  • 1-2 tablespoon toasted oats or granola
  • 1-2 tablespoon barley flakes
  • pinch spices e.g. cinnamon, nutmeg etc.
  • 1-2 teaspoon honey, date syrup, maple syrup etc to drizzle

Instructions
 

  • 180-200 g natural, unsweetened yogurt
    Divide half of the yogurt between two serving glasses or dishes.
  • 4-6 tablespoon prepared fruits e.g. berries, diced peaches, pears, apricots etc, stoned cherries, sliced banana – or a combination of your choice, 2-3 tablespoon creamy almond butter
    Carefully arrange half of the fruit on top of the yogurt. Drizzle with the almond butter.
  • 2 teaspoon flaked almonds
    Repeat with the remaining yogurt, and top with the rest of the fruit. Sprinkle over the flaked almonds to garnish.
  • Serve and enjoy!

Notes

To incorporate the optional extras – I like to mix the seeds, coconut or spices into my yogurt before layering. Granola or barley flakes can be added as a separate layer alongside the fruit, nut butter etc. Sweeteners such as honey or date syrup can be drizzled on as a final layer or served alongside for diners to add at their own discretion.

What kind of yogurt is best for a parfait?

The best yogurt for a parfait depends on personal preference and dietary needs. Greek yogurt offers a thick, creamy texture and is high in protein, making it a popular choice. Regular natural yogurt is smoother and slightly sweeter, while non-dairy yogurts, such as soya or coconut yogurt, are excellent options for those following a vegan diet or have lactose intolerance.
I prefer goats’ milk yogurt for its creamy texture, mild flavour, and digestibility. Choose a live yogurt for maximum probiotic benefit.

Can fruit and nut yogurt parfaits be made in advance?

Yes, fruit and nut yogurt parfaits can be made in advance, but how far ahead of time will depend on the ingredients used. To maintain the best texture and freshness, assemble the parfait no more than a few hours before serving – otherwise you risk soggy fruit and a less pleasant eating experience. Cover the parfait and store in the refrigerator to keep it fresh.

Are yogurt parfaits suitable for special diets?

Fruit and nut yogurt parfait is completely vegetarian, and can be made vegan by simply using a plant-based yogurt.
It is suitable for celiacs and others with gluten-sensitivity. However some of the optional ingredients such as toasted oats or granola are not suitable, so consider this when making your own parfait.
Nut allergy sufferers can still make a delicious parfait by substituting a seed butter such as pumpkin seed butter or sun-butter, and using crunchy seeds like sesame or chia, or toasted coconut flakes, for the topping.
