I remember it clearly, because as well as the flavour, the texture of the mushrooms was uniquely satisfying – meaty, chewy and succulent. For years I tried to recreate the marinated mushroom salad recipe without success… Until I finally remembered the critical step that I’d forgotten!

This recipe works well with any firm mushroom variety, such as standard white mushrooms, portabella or chestnut. However my favourites for this delicious marinated mushroom salad are button mushrooms. Their small size means that they can be used whole, whereas larger mushrooms require cutting into smaller pieces. I think this gives a more attractive presentation as well as reducing the work involved!

- Mushrooms! – I prefer button mushrooms for this recipe but you can use whichever type of firm mushrooms you prefer.
- Extra virgin olive oil for richness
- Lemon juice and white wine vinegar – provide the acid that helps to infuse the flavour into the mushrooms
- Shallots and garlic – for a delicious piquant flavour
- Red/orange/yellow pepper – bring colour and a little natural sweetness
- Parsley and oregano – add a tasty, herbal note
- Lemon zest for freshness
- Salt and pepper to season

The secret step to marinated mushroom salad perfection!
The critical step to creating succulent, juicy and delicious marinated mushrooms is a simple one, and I’m so annoyed with myself for forgetting it for all those years! To make this gorgeous salad, first you BOIL the mushrooms in lightly salted water for about 3-4 minutes. This cooks them, and makes the mushrooms more able to absorb the marinade and soak up the delicious flavours of the dressing.
While the mushrooms are boiling, you can whisk together the marinade. Then simply drain the cooked mushrooms and mix with the dressing. Cover the salad and leave in the fridge for at least an hour, or overnight. Serve and enjoy!

Presentation Perfection – Serving your marinated mushroom salad
With its glossy dressing, and vibrant flecks of pepper and herbs, I don’t think this delicious mushroom salad requires much adornment! Serve it in a pretty bowl or plate, and simply garnish with a sprinkle of fresh herbs or a little extra lemon zest to add an extra touch of flavour and elegance.

This tasty salad makes a wonderful starter with some challah or crusty fresh bread. Or you can serve it as part of a larger selection of dishes for a lunch or dinner. It’s also great packed into a lunchbox or picnic.

Marinated Mushroom Salad
Ingredients
- 300 g button mushrooms (or other firm mushrooms)
- 2 shallots
- 1 clove garlic
- ½ red/orange/yellow pepper (or a combination)
- 2-3 tablespoon finely chopped parsley
- 1 teaspoon dried oregano
- 1 lemon – zested
- 2 tablespoon fresh lemon juice
- 2 tablespoon white wine vinegar
- 4 tablespoon extra virgin olive oil
- salt and pepper to taste
Instructions
- 300 g (10 4/7 oz) button mushrooms (or other firm mushrooms)Brush any dirt from the mushrooms. If your mushrooms are large, cut them in halves or quarters to make bite sized pieces.Place the mushrooms in a saucepan of lightly salted boiling water and simmer for 4-5 minutes.
- 2 shallots, 1 clove garlic, ½ red/orange/yellow pepper (or a combination)Meanwhile, make the marinade.Peel and finely chop the shallots and garlic and add to a bowl. Remove and seeds from the pepper and cut into very small dice. Add to the shallots and garlic.
- 2-3 tablespoon finely chopped parsley, 1 teaspoon dried oregano, 1 lemon – zested, 2 tablespoon fresh lemon juice, 2 tablespoon white wine vinegar, 4 tablespoon extra virgin olive oil, salt and pepper to tasteAdd the herbs and lemon zest to the bowl, then whisk in the lemon juice, vinegar and olive oil. Add a pinch each of salt and pepper, then taste and add a little more if necessary.
- When the mushrooms are cooked, drain them well and add to the dressing in the bowl. Mix thoroughly to coat, cover the bowl and refrigerate for at least an hour or overnight.
- If liked, garnish with more herbs and lemon zest before serving.
