A lapse of memory…

I first made a marinated mushroom salad in a Domestic Science class at school, when I was about 13 years old. I remember it clearly, because as well as the flavour, the texture of the mushrooms was uniquely satisfying – meaty, chewy and succulent. For years I tried to recreate the marinated mushroom salad recipe without success… Until I finally remembered the critical step that I’d forgotten!

This one additional step will enable you to create a sensational dish that will leave diners wanting more! Get ready to transform your mushrooms and enjoy this gorgeous marinated mushroom salad.

What are mushrooms? Understanding fungi

Mushrooms are the fruiting bodies of certain types of fungi. Fungi are neither animals nor plants, but make up a hugely varied and fascinating kingdom of organisms, including moulds, yeasts and of course mushrooms.

Fungi bring unique flavours and textures to food, not only as ingredients, but as essential partners in food production. For instance, without them there would be no beer, wine, soy sauce, blue cheese, tempeh, or even bread!

Choosing the right mushrooms

Mushrooms are widely available and in recent years more and more varieties are hitting our supermarket shelves. This recipe works well with any firm mushroom variety, such as standard white mushrooms, portabella or chestnut. However my favourites for this delicious marinated mushroom salad are button mushrooms. Their small size means that they can be used whole, whereas larger mushrooms require cutting into smaller pieces. I think this gives a more attractive presentation as well as reducing the work involved!

Nutritional benefits of mushrooms

Mushrooms are not only a tasty addition to your meals but also pack a nutritional punch. They are high in dietary fibre, so support healthy digestion. Additionally, mushrooms are a good source of essential nutrients such as vitamin B, potassium, and certain antioxidants. Eating mushrooms can help boost your immune system, support heart health, and reduce inflammation in the body.

Marinating Magic: Infusing flavour into your mushrooms

Marinating your mushrooms allows them to absorb additional flavours and seasonings, enhancing their natural taste and creating a complex and savoury dish.

The combination of oil, acid, vegetables, herbs, and spices infuses your mushrooms with delicious depth and richness. Marinating your mushrooms is a simple yet effective way to make each bite vibrant and satisfying. This marinated mushroom recipe will transform your mushrooms from an everyday staple into a mouthwatering delight!

Marinating not only enhances the taste of your mushrooms but also allows you to add texture and colour with complementary ingredients. The end result is a visually appealing and well-balanced salad that is sure to delight.

Ingredients in marinated mushroom salad

To create a mouthwatering marinated mushroom salad, you will need the following simple ingredients:

  • Mushrooms! – I prefer button mushrooms for this recipe but you can use whichever type of firm mushrooms you prefer.
  • Extra virgin olive oil for richness
  • Lemon juice and white wine vinegar – provide the acid that helps to infuse the flavour into the mushrooms
  • Shallots and garlic – for a delicious piquant flavour
  • Red/orange/yellow pepper – bring colour and a little natural sweetness
  • Parsley and oregano – add a tasty, herbal note
  • Lemon zest for freshness
  • Salt and pepper to season
Ingredients in marinated mushroom salad - button mushrooms, shallots, garlic, lemon juice and zest, red/orange/yellow peppers, chopped parsley, white wine vinegar, extra virgin olive oil, oregano.

The secret step to marinated mushroom salad perfection!

The critical step to creating succulent, juicy and delicious marinated mushrooms is a simple one, and I’m so annoyed with myself for forgetting it for all those years! To make this gorgeous salad, first you BOIL the mushrooms in lightly salted water for about 3-4 minutes. This cooks them, and makes the mushrooms more able to absorb the marinade and soak up the delicious flavours of the dressing.

While the mushrooms are boiling, you can whisk together the marinade. Then simply drain the cooked mushrooms and mix with the dressing. Cover the salad and leave in the fridge for at least an hour, or overnight. Serve and enjoy!

Steps in making marinated mushroom salad - boil the mushrooms, make the marinade, drain the mushrooms, add to the prepared marinade, mix well and refrigerate, plate and serve.

Presentation Perfection – Serving your marinated mushroom salad

With its glossy dressing, and vibrant flecks of pepper and herbs, I don’t think this delicious mushroom salad requires much adornment! Serve it in a pretty bowl or plate, and simply garnish with a sprinkle of fresh herbs or a little extra lemon zest to add an extra touch of flavour and elegance.

This tasty salad makes a wonderful starter with some challah or crusty fresh bread. Or you can serve it as part of a larger selection of dishes for a lunch or dinner. It’s also great packed into a lunchbox or picnic.

Marinated mushrooms are also wonderful as part of a cheese board or charcuterie board. Pair with cheeses, olives, dips and antipasti to make impressive party nibbles or elevated snacks for friends and family.

  • 1 teaspoon dried oregano
  • 1 lemon – zested
  • 2 tablespoon fresh lemon juice
  • 2 tablespoon white wine vinegar
  • 4 tablespoon extra virgin olive oil
  • salt and pepper to taste

Instructions

  • 300 g (10 4/7 oz) button mushrooms (or other firm mushrooms)
Brush any dirt from the mushrooms. If your mushrooms are large, cut them in halves or quarters to make bite sized pieces.

Add the herbs and lemon zest to the bowl, then whisk in the lemon juice, vinegar and olive oil. Add a pinch each of salt and pepper, then taste and add a little more if necessary.
  • When the mushrooms are cooked, drain them well and add to the dressing in the bowl. Mix thoroughly to coat, cover the bowl and refrigerate for at least an hour or overnight.
  • If liked, garnish with more herbs and lemon zest before serving.

Marinated Mushroom Salad – FAQs

What are the best mushrooms to use for this marinated mushroom salad?

Any firm mushrooms will work well in this recipe, including regular white mushrooms, chestnut mushrooms and portabellas. However I prefer to use button mushrooms as their small size is both attractive and convenient.

How should I store the mushroom salad?

Marinated mushroom salad should be stored in the refrigerator, in a sealed container or covered bowl. The salad should be chilled for at least an hour or overnight, while the marinade is absorbed by the mushrooms. It will then keep in the fridge for a further 2-3 days.

Is this salad suitable for special diets?

This delicious marinated mushroom salad is completely vegan and gluten-free. It is also free from many common allergens. This salad is a great choice if you are cooking for people with special dietary requirements.
