In the world of Jewish culinary convenience, soup powder has long been a pantry staple. For many years I would unthinkingly reach for that yellow and red package and add a spoonful of parve ‘chicken’ powder to soups, sauces, risottos, or whatever else was on the menu.

But that magic flavour powder wasn’t what you’d call nutritious. Made with a blend of salt, MSG (monosodium glutamate), starches, palm oil, ‘extracts’ and other highly processed ingredients, it has little to no nutritional value. I felt sure there was a way to enjoy the same quick and easy meal preparation without compromising my family’s healthy diet.

  1. Add the sunflower seeds and dried mushrooms to a food processor or blender, and pulverise to a powder.
  2. Add the nutritional yeast and chilli flakes and whizz again to combine.
  3. Tip into a bowl, add the remaining ingredients, and mix well.
  4. Once everything is a uniform consistency, tip into a clean, dry, airtight jar to store.

Storing Homemade Healthy Soup Powder

Homemade soup powder will keep for 2-3 months if stored correctly.

Ingredients
 
 

  • 60 g sunflower seeds
  • 2 dried porcini mushrooms
  • 50 g nutritional yeast
  • 1 tablespoon chili flakes (or to taste)
  • 1 tablespoon turmeric powder
  • 1 tablespoon dried parsley
  • 1-2 tablespoon salt
  • 1 teaspoon ground black pepper

Instructions
 

  • 60 g (2 ⅛ oz) sunflower seeds, 2 dried porcini mushrooms, 50 g (1 ¾ oz) nutritional yeast, 1 tablespoon chili flakes (or to taste)
    Put the sunflower seeds and dried mushrooms into a food processor or blender, and pulverise to a powder. Add the nutritional yeast and chilli flakes and whizz again until everything is well combined.
  • 1 tablespoon turmeric powder, 1 tablespoon dried parsley, 1-2 tablespoon salt, 1 teaspoon ground black pepper
    Tip the powder into a bowl, add the turmeric, parsley, salt and pepper, and mix well.
  • Once everything is a uniform consistency, carefully transfer to a clean, dry, airtight jar. Store in a cool, dark place.

Notes

I use approx. 1 tablespoon of powder for each 250ml (1 cup) of water to create a stock or soup base.

Is healthy soup powder as tasty as regular bouillon?

Absolutely! While the flavour profile might be slightly different, I personally find it much tastier than regular bouillon powder. The natural ingredients like nutritional yeast and dried mushrooms provide a rich, umami flavour that can rival or surpass traditional stock cubes or soup powder.

How long does healthy soup powder last?

When stored properly, healthy soup powder can have a surprisingly long shelf life. Keep it in an airtight container in a cool dry place and it will be fine for up to 3 months or even longer. For the best taste and health benefits, try to use your soup powder regularly and replenish as needed.
Always use clean, dry utensils when scooping, and keep the container tightly sealed. If you notice any off smells or see signs of moisture or mould, it’s best to discard the powder.

Is homemade soup powder suitable for special diets?

Yes! This homemade blend is completely vegan and gluten-free. It also contains no tree nuts, peanuts, eggs or sesame seeds.
