What is biscoff?

Biscoff is a creamy, lightly spiced, caramel-ly spread. It’s also called Lotus spread or cookie butter, and is made using Lotus biscoff biscuits. It’s delicious on toast, pancakes, or waffles, and can also be used as an ingredient – like here!

It also falls into the category of “accidentally vegan”. Which is to say, it wasn’t developed as a vegan product, but as it contains no animal products, including eggs or dairy, it can be safely enjoyed by people following a vegan or plant-based diet. Yay!

3 slices of toast stacked on a white plate, the top slice has some biscoff spread on it and a butter knife balanced on top.

Don’t forget dessert!

It’s happened to the best of us (well, me, anyway). You spend hours in the kitchen whipping up a delicious dinner, and with minutes to go till mealtime, you realise you forgot dessert!

Usually this means ice-cream and cookies, or a platter of hastily sliced fruit. However this glorious biscoff dip takes only minutes to throw together and is a total show-stopper! If you love biscoff you’ll go wild for this creamy, delicious cheesecake-y dessert.

Biscoff dip – good any time!

Of course, you don’t have to wait till after dinner to enjoy this biscoff cheesecake dip. It makes a fabulous snack or spread at any time of the day.

Biscoff cheesecake dip ingredients

There are only three ingredients in this gorgeous dessert dip. If you’re the sort of person who likes to keep a jar of biscoff spread handy, you may well have all of them in your kitchen already!

All you will need is:

  • Biscoff spread – aka Lotus spread, aka cookie butter
  • Cream cheese or a vegan ‘cream cheese style’ spread such as tofutti or Oatly creamy oat spread (Lots of other alternatives are available – pick your favourite!)
  • Mini chocolate chips – or you can use bigger ones or even just some chopped up dark chocolate. Yum!
Ingredients for making biscoff cheesecake dip - biscoff (cookie butter), cream cheese, chocolate chips.

Biscoff dip – a quick last minute dessert!

So, if you’re wanting a last minute, minimal effort, utterly delectable cheesecake-based dessert/snack/spread then look no further. I’ve got you covered. You don’t even have to read the instructions – just watch the video below!

Whisk or spoon

I used an electric whisk to make my biscoff dip. However if you don’t have one, or you don’t want to use one on yomtov, you can just beat all the ingredients together with a spoon. It will still be super-yummy.

Serve the biscoff cheesecake dip with sliced fruit, breadsticks, crackers, or for real indulgence, scoop some onto a Lotus biscuit. Mmmmm.

Chag Shavuot sameach!

Thanks Dannii! I’ve been meaning to do it for ages, and thought something simple (3 ingredients!) was a good place to start. Shame the lighting in my kitchen is so rubbish though 🙁
Looking forward to seeing yours! H x.
